The most traditional foods of France include cheeses, breads, like baguette, duck confit and vichyssoise.

La baguette

Looking back, this cuisine distinguished itself by being elegant, sumptuous and an honoring of its king.

Later, with the arrival of the French Revolution, this great cuisine, previously limited to the court and the king, goes out into the street and becomes popular. This led to new restaurants opened by those who had cooked for aristocrats.

With these popular restaurants comes innovation in traditional dishes such as lighter sauces with respect for the taste of fresh produce, using ingredients such as potatoes, leeks, turnips and fruits, stewed and roasted turkey, chicken, pork, rabbit, venison and seafoods.

France is now a country that offers a diversity of dishes from both its traditional cuisine and the new movement with a much simpler and more natural emphasis.
